Christmas Cranberry Cake
My Meemaw has so many famous recipes and I am so very thankful for them. As a family, we grew up enjoying so many of her recipes. A few years ago, all of us girls were given a specially made cookbook containing many of Meemaw’s recipes. One in particular that I love making around Christmas time is her cranberry cake with vanilla sauce.
The cranberry cake is fluffy and moist with the perfect tang added from the fresh cranberries. It is then doused in homemade vanilla sauce that add a creaminess and extra sweetness! This cake comes together so quickly with just a couple ingredients.
Cranberry Cake Ingredients:
- 1 cup all purpose flour
- 1/2 cup cane or white sugar
- 1.5 tsp baking powder
- 1/2 cup milk
- 1 cup fresh cranberries
- 1.5 tbsp melted butter
Cake Directions:
Grease an 8×8 inch baking dish and preheat oven to 375. In a bowl mix together flour, sugar, and baking powder. Mix in milk until fully combined then fold in cranberries. Lastly, stir in your melted butter then pour batter into your prepared baking dish. Bake in preheated oven for 30 minutes.
Vanilla Sauce Ingredients:
- 6 tbsp melted butter
- 1/2 cups sugar
- 1/4 cup heavy cream
- 1/2 tsp vanilla
Vanilla Sauce Ingredients:
Combine butter, sugar, and heavy cream on the top of a double boiler* over boiling water. Whisk until sugar has dissolved and sauce is smooth. Remove from heat and stir in vanilla. Immediately pour over cranberry cake. Let cake soak in sauce for a few minutes before serving. Enjoy!
*If you don’t have a double boiler, simply heat a pot with a small amount of water on the stove until it is gently boiling. Place a glass bowl on top of the pot and mix your ingredients in that.
