Sourdough Applesauce Quick Bread
It’s that time of year again where I want to bake all the things! Fall is one of my favorite seasons for this very reason. Baking fills my home with comforting smells and our bellies with comforting foods. And this year I went all out and ordered 20 pounds of organic apples! The girls and I spent two full days baking and making applesauce and apple butter. I knew I wanted to try a recipe for applesauce bread and love the results I got!
I also had lots of sourdough discard to use up so I decided to make a sourdough quick bread with the applesauce. It turned out moist and is loaded with apple flavor thanks to the applesauce and the added diced apple. Just the way I like it. And don’t skimp on the cinnamon! It compliments the apple so well. You can top a slice with apple butter for even more apple goodness too!

Ingredients:
- 1 cup old fashioned oats
- 1/2 cup homemade applesauce
- 1/2 cup milk of choice (I used almond milk)
- 1/2 cup sourdough discard
- 1/3 cup oil (I prefer sunflower or coconut oil)
- 1 egg
- 1 tsp vanilla
- 1/2 cup brown sugar
- 1.5 cups flour
- 1.5 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 small apple, diced
Directions:
Preheat oven to 350 degrees. Prepare a 9 inch loaf pan by lining with parchment paper or spraying with non stick spray. In a small bowl combine oats, applesauce, and milk and let soak. In a large bowl, mix together sourdough discard, oil, egg, vanilla, and brown sugar. Then add in your oat mixture and stir to combine. Lastly, add remaining ingredients and mix until just combined. Pour batter into prepared loaf pan. Bake for 45 to 60 minutes or until toothpick inserted into bread comes out clean. Let cool on a rack before slicing then enjoy! This keeps well in the refrigerator for up to 1 week.
