Skillet Fried Potatoes
Potatoes have to be one of the most versatile foods in existence. Fried, roasted, baked, mashed, any way you make them, potatoes are delicious. They can be served as a side or meal at basically any time of day. But my favorite time to eat them is for breakfast and they have to be skillet fried!
Recently, we have been loving a good, hearty breakfast to get the day started. Homemade biscuits or muffins, some type of protein (eggs, bacon, sausage), and skillet fried potatoes are the basics for a hearty meal. And I have discovered the trick for making potatoes that are crispy on the outside but still soft on the inside.
What’s the trick? Par boil your potatoes before frying them in your pan! This makes sure that the potatoes cook all the way through on the inside without burning the outside. Add some seasonings and even fry your potatoes in bacon grease and you’re set to have a delectable dish!
Like I mentioned above, potatoes fried in bacon grease are game changers. Anytime after cooking bacon, I always save the grease in a jar and keep it in the fridge. When I’m ready to fry the potatoes, I just add the grease into my hot skillet. But if you don’t have bacon grease on hand, butter or Nutiva butter flavored coconut oil works great too!
*One last tip: when using a cast iron skillet, make sure your skillet is good and hot before adding the potatoes. This will ensure crispy potatoes in no time! I always begin warming my pan while the potatoes are boiling.
Ingredients:
- 1.5 lbs baby red skinned potatoes, quartered
- 5 tbsp bacon grease, butter, or oil
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1 tsp dry, minced onion
Directions:
Begin by boiling your potatoes for 5 to 10 minutes, or until soft enough to pierce with a fork. While potatoes are boiling, heat a cast iron skillet to medium high heat. Once potatoes are fork tender, drain them from the water. Add your grease or butter to your hot skillet then add the potatoes. Immediately add your seasonings to the potatoes and stir to combine. Cook while stirring occasionally until potatoes begin to brown on the outside and become crispy. Usually about 5 minutes. Remove from pan and enjoy!
