Pork Chops and Mushroom Stuffing

Back at it with another comfort meal! This one just so happens to be significantly easy to make. Pork chops and mushroom stuffing is a family recipe that is my dad’s favorite meal! It’s a hearty, warm dish that is easy to make for a crowd along with being a crowd pleaser. Browned pork chops go into a pan then covered with prepared stuffing, and finally smothered in cream of mushroom soup.

I was pretty excited to recently find organic cream of mushroom soup at Aldi. I’ve tried a couple other organic types from other stores and they have all not been very good. But Aldi saves the day again with an organic option that tastes so good! You can definitely use whatever brand you like best for this meal though. Another note: this can be baked in an oven safe skillet so you only have to use one dish (yes please!). Or you can transfer your browned pork chops to a baking safe dish.

You can easily put this dish together in no time! We always serve it with corn and another fresh side such as salad or my homemade applesauce. I hope you love this meal as much as we do!

Ingredients:

  • 4 boneless, thick cut pork chops
  • 6 tbsp butter, divided
  • 1 cup chicken broth
  • 8 oz herb stuffing mix
  • 15 oz can cream of mushroom soup
  • salt and pepper

Directions:

Preheat oven to 350. Heat a skillet over medium high heat and add in 2 tbsp butter. Sprinkle pork chops with salt and pepper, then transfer to heated pan. Sear each pork chop until golden brown on each side. (Don’t worry about cooking the pork chops all the way through. They will finish in the oven.) While chops are searing, prepare your stuffing mixture. Add mix to a large bowl with 4 tbsp melted butter and your chicken broth. Mix until combined. When pork chops are finished, either leave them in oven safe pan or transfer to a baking dish. Spoon stuffing mixture over top then pour your soup over everything. Bake in the oven for one hour. Let cool slightly, serve, and enjoy!
