Chicken Salad Made with Plain Yogurt!
Homemade chicken salad. Such an easy and filling meal! We usually stick to eating leftovers for lunch but sometimes I like to switch it up with something different, light, and fresh. Chicken salad makes for the best switch!
Most chicken salads are made with mayo, which I’ll be honest, just sounds icky to me. Instead, I created a recipe using plain yogurt! It gives the mix a lighter feel but still holds true to the creamy taste. What else do I add to brighten the chicken salad? Fruit, of course!
Adding diced apple and sliced grapes in chicken salad is one of the best decisions I have ever made (when it comes to food at least, ha!). That little bit of added sweetness makes all the difference, while also adding some texture to the dish. For the chicken in this dish, I often throw it in the crockpot earlier in the day then shred it and let it cool before mixing everything together. Add a spoonful to a cracker, serve on toasted sourdough, or even serve on cucumber slices! Yum!
Ingredients:
- 2 cups shredded chicken
- 1/2 cup plain yogurt (can use regular or greek)
- 2 celery stalks, diced
- 1/2 cup sliced grapes
- 1/2 cup diced apples
- juice of half a lemon
- 1/2 tsp salt
- pinch of garlic powder or more to taste
- optional add ins: raisins, craisins, pecans, or slivered almonds.
Directions:
Combine everything into a bowl and mix well. Taste and adjust seasonings as desired. Enjoy!
