Chinese Fried Rice
My Meemaw had all sorts of recipes that were just fantastic. Chinese fried rice was one of them and has been passed down all throughout our family. Now here’s a disclaimer* this is not traditional chinese food. But it does contain rice and soy sauce. So close enough, right?
You’re probably wondering how this is so different from traditional chinese rice. One word: Bacon. That’s right! The rice is fried in bacon grease and it doesn’t get much better than that, folks. Actually, it does. The dish is full of crispy bacon pieces scattered throughout the rice. Don’t worry though, there are some healthier aspects to this dish! I always add peas into the rice and occasionally add minced carrots too. If you would like even more veggies, add in some sautéed zucchini as well!
Perfect for feeding a crowd, weekly meal prep, or getting kids to eat some extra veggies. I purposefully make a little extra so we can have leftovers for lunch. Both of my girls are BIG fans of this meal and never fail to gobble theirs up within minutes.
Ingredients:
- 12 oz pack of bacon (I use the uncured Never Any brand from Aldi!)
- 3 cups rice, cooked according to package
- 1 tsp dried minced onion
- 1 cup frozen peas
- 1 egg
- 4 to 6 tbsp soy sauce
Directions:
Cut bacon into 1 inch pieces and add to a non stick pot over medium high heat. Cook until all pieces are browned then drain all but 1 tbsp of bacon grease and return to the burner. With heat still on medium high, add cooked rice and stir constantly for 3 minutes. Add dried minced onion and peas, stir, then reduce heat to medium. Push rice mixture to the side of pot and add your egg and scramble until cooked through. Add soy sauce to rice mixture to taste, stir until warmed through.
We always serve with a side of warm biscuits. Enjoy!
