Chicken Noodle Soup
The weather in South Carolina had been rough with hurricanes, incessant rain, and flash floods. It only made sense that we as a family would be feeling under the weather too.
Anytime I’m not feeling well, I instantly crave chicken noodle soup. The canned kind works fine in a pinch, but homemade is the best. I try to pack it full of immune boosting herbs and spices which makes the soup all the more flavorful and comforting. I had just about all the ingredients already in my pantry/fridge for this recipe and it turned out delicious!
Not only did this soup taste so yummy, but it was very easy to whip up. I already had leftover shredded chicken that I had made in the crockpot so all that was left was to prep the veggies. A job that only took about 5 minutes.
I’ve tried many different chicken noodle soup recipes in the past, but none quite lived up to my expectations. They were either too bland or too watery. I’m a big fan of hearty soups. So I pulled out my dutch oven and started throwing the soup together. It came together perfectly and hit the spot in soothing our colds.
Ingredients:
1 onion chopped
2 carrots chopped
2 celery stalks chopped
2 tsp minced garlic
2 tbsp butter or coconut oil
6 cups chicken broth
4 cups water
1/2 tsp turmeric
1/4 tsp thyme
2 tsp dried parsley
Salt and pepper to taste
2 tbsp flour
3 chicken breasts cooked and shredded
16 oz egg noodles
Juice of half a lemon
Directions:
In a Dutch oven over medium high heat, add the carrots, celery, onion, and garlic with 2 tbsp butter/oil and sauté until veggies begin to soften. Add the spices and flour and stir until combined. Add chicken broth and water. Bring to a boil, stir, then reduce to a simmer and add shredded chicken. Let simmer together for at least 15 minutes and adjust seasonings as desired.
Bring to boil once more, add egg noodles, and cook 8 to 10 more minutes until noodles are al dente. Finally, squeeze the juice of half a lemon over the top and serve.
We enjoyed this with a side of crusty french bread. This reheats well, just add water if you need more liquid.
