Stephanie’s Lentil Soup

Stephanie, my sister in law, is known for her soups. This lentil soup recipe comes from her and it’s a keeper! Not only because of how easy it is, but because the taste is perfect. It has just enough spice to make you feel warm, but not too overwhelming for little ones to eat. Throw this soup in the crockpot, come back eight hours later, and your dinner is all set!

Not only is the soup delicious as soon as it’s ready, but I think it tastes even better the next day. I’m a huge fan of leftovers and this is one of my favorites.

*Bonus: This soup is cheap and great for feeding a crowd!

Ingredients:

  • 1 lb bag of green lentils
  • 1 15 oz can diced green chiles and tomatoes (such as Rotel)
  • 1 package kielbasa (pork or beef), coined
  • 3 carrots, chopped
  • 3 cups chicken broth
  • 4 cups water
  • 1 tsp salt
  • 1 tsp pepper

Directions:

Throw everything into the crockpot and cook on low for 8 hours, stirring every so often. That’s it!
